Mirabelle Plum Jam, Almond And Verbena

  • 1 kg mirabelle
  • 750 g Cristalized sugar
  • 4 stems Lemon verbena
  • 2 tbsp. soup Bitter almond extract


  1. Start this jam recipe by washing and drying plums. Open them in half and pit them. Remove lemon verbena.
  2. Make a layer of mirabelle plums in a bowl of jam. Sprinkle them with sugar, add a few leaves of verbena. Repeat the process until you have used mirabelle plums and sugar. Sprinkle with bitter almond extract. Let macerate for 6 hours.
  3. Place the bowl over low heat and cook for 20 minutes over low heat mixing very regularly.
  4. Dab the jam jars, flip them over a cloth so they drip. Fill them with boiling jam, close the pots and turn them over immediately. Let cool completely before storing the pots in a dry place away from light.
